What’s so good about it? Quinoa (pronounced Keen-Wah) is a grain crop grown for its edible seeds. Quinoa is not a cereal grain, but a pseudo-cereal closer in relation to beetroot and spinach than rice or wheat. It is naturally gluten-free and is one of only a few plant foods that are considered a complete protein.
How is it made? Quinoa was an important crop for the Incan Empire. They referred to it as the ‘mother of all grains’ and believed it to be sacred. Sustainably grown on the Bolivian Altiplano, Quinoa is usually harvested by hand and harvest needs to be precisely timed to avoid seed losses.
How do I use it?
Add to salads, stews and fritters. Use in place of rice and grains. You can even use it as a delicious base for a gluten-free choc mud cake!
Measure and wash your quinoa well. Bring quinoa, water and a pinch of Himalayan salt to a rapid boil, then reduce to a gentle simmer for 15 mins (until the water has absorbed). Take off the heat and set aside for 10 mins. Fluff with a fork and serve – delicious with olive oil or butter mixed through just prior to serving.
